A hearty and flavorful soup inspired by the classic Reuben sandwich, featuring corned beef, sauerkraut, Swiss cheese, and Russian dressing.
Ingredients:
- 1 lb corned beef, diced
- 1 cup sauerkraut, drained and rinsed
- 4 cups beef broth
- 1 cup diced onions
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup shredded Swiss cheese
- 1/2 cup heavy cream
- 1/4 cup Russian dressing
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Chop up some potatoes, onions, carrots, and celery and add them
Cook the onions until they become clear
Sauerkraut and diced corn beef should be added
Bring it to a boil again
Add the beef broth and heat it up
Turn down the heat and let it cook for 20 minutes
The Russian dressing, heavy cream, and shredded Swiss cheese should all be mixed in
Cook for another 5 minutes, stirring every now and then
Add pepper and salt to taste
If you want, you can top the hot dish with extra shredded Swiss cheese
