Gluten-Free Carrot Pear Oat Muffins

These gluten-free muffins are a perfect combination of carrots, pears, and oats. They are sweetened with natural honey or maple syrup, making them a healthier choice for your snack or breakfast. These muffins are moist, flavorful, and gluten-free, suitable for those with dietary restrictions.

Ingredients:

  • 1 cup gluten-free rolled oats
  • 1 cup gluten-free oat flour
  • 1/2 cup grated carrots
  • 1/2 cup grated pear
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1/4 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tsp gluten-free baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts optional

Instructions:

Warm up the oven to 350F 175C and put paper liners in a muffin tin

Put the rolled oats and oat flour in a large bowl and mix them together

Grate the carrots and pear into the bowl, then mix them together well

In a different bowl, mix the eggs, vegetable oil, honey or maple syrup, and applesauce with a whisk

In a separate bowl, mix the baking soda, ground cinnamon, baking powder, and salt

Mix the wet and dry ingredients together, and if you want, add the chopped walnuts

Fill up each muffin tin cup about two thirds of the way to the top with batter

After the oven is hot, bake the muffins for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean

Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way down
