Ingredients:
- 1 lb chicken breast, diced
- 2 cups white rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can 14
- 5 oz diced tomatoes
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped parsley for garnish
Instructions:
Heat the olive oil in a big skillet over medium heat
Cook the diced chicken for five to six minutes, or until browned
Add the minced garlic, bell pepper, and diced onion
Simmer the vegetables for 45 minutes, or until they are soft
Add the pepper, salt, and Cajun seasoning and stir
Add the diced tomatoes, rice, and chicken broth
Mix thoroughly to blend
After bringing the mixture to a boil, turn down the heat
