Ingredients:
- 2 pork tenderloins about 1 lb each
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup apple cider
- 1/4 cup Dijon mustard
- 2 tablespoons maple syrup
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Fresh apple slices for garnish optional
Instructions:
Before you start cooking, heat the oven to 375F 190C
Add salt and pepper to the pork tenderloins
Warm up the olive oil in a skillet that can go in the oven over medium-high heat
Grill the pork tenderloins all the way through until they are golden brown
To make the sauce, mix apple cider, Dijon mustard, maple syrup, minced garlic, dried thyme, cinnamon, and nutmeg in a bowl with a whisk
Pour the apple cider mix over the pork tenderloins that have been seared in the pan
Place the skillet in an oven that has already been heated and roast for 20 to 25 minutes, or until the internal temperature reaches 145F 63C
Use the cider mixture to baste the pork every so often
Take the pan out of the oven when the pork is done and let it rest for a few minutes before cutting it
If you want, you can add fresh apple slices as a garnish
Serve the Apple Cider Pork Tenderloin slices with the skillet cider sauce that has been boiled down
