Ingredients:

- 5-3 pounds pork shoulder, cut into chunks
- Salt and black pepper to taste
- 1/4 cup soy sauce
- 1/4 cup honey
- 3 tablespoons freshly squeezed lime juice
- 2 tablespoons grated fresh ginger
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes optional
- 2 tablespoons cornstarch for thickening
- 2 tablespoons water for cornstarch mixture
- Sesame seeds and sliced green onions for garnish
Instructions:
Add salt and black pepper to the pork chunks
Melt the garlic, add the ginger, honey, lime juice, sesame oil, and red pepper flakes if using
Mix everything together in a bowl
Mix the sauces together and pour them over the pork in the slow cooker
For 6 to 8 hours, or until the pork is soft and easy to shred, cover and cook on low heat
To make a slurry, mix cornstarch and water in a small bowl
Add the cornstarch slurry and stir it into the slow cooker
Cook on high for another 30 minutes, or until the sauce gets thicker
Use two forks to shred the pork, then mix it with the sauce that has thickened
Put green onions and sesame seeds on top to make it look nice
You can eat the pork with rice or in your favorite tacos
