Ingredients:
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1 packet active dry yeast
- 1/2 cup warm milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon salt
- Oil for frying
- 1 cup custard cream
- 1 cup chocolate ganache
- Powdered sugar for dusting
Instructions:
Mix the yeast and warm milk together in a bowl
Until it foams, let it sit for five minutes
Mix the flour, granulated sugar, cocoa powder, and salt in a separate bowl
To the dry ingredients, add the eggs, melted butter, and yeast mixture
Stir to form a dough
Until the dough is smooth and elastic, knead it for five to seven minutes on a floured surface
After the dough has doubled in size, put it in a bowl that has been oiled, cover it with a cloth, and let it rise for an hour
After pounding the dough, roll it out to a thickness of half an inch
Using a glass and a smaller round cutter for the centers, cut out doughnuts using a doughnut cutter
Preheat oil to 350F 175C in a deep fryer or heavy-based pan
Fry the doughnuts in batches, giving each side two to three minutes to turn golden brown
After taking the doughnuts out of the oil, pat dry with paper towels
Spoon custard cream into the center of each doughnut using a piping bag
Coat the doughnut tops in chocolate ganache
Dust the top with powdered sugar
Serve the doughnuts with chocolate custard cream right away
