Ingredients:
- 2 boneless, skinless chicken breasts
- 4 strips of paleo-friendly bacon
- 1/2 cup homemade paleo mayo see separate recipe below
- 1/2 cup diced green onions
- 1/4 cup chopped celery
- 1/4 cup diced red bell pepper
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- Mixed salad greens for serving
Instructions:
Add salt and pepper to the chicken breasts for seasoning
Cook the bacon in a skillet over medium-high heat until crispy
Take it out of the skillet and break it up into tiny pieces
In the same skillet with the bacon fat, add the seasoned chicken breasts
Cook the chicken for 67 minutes on each side, or until it is thoroughly cooked and no longer has any pink in the center
Before slicing it into thin strips, take it off the heat and give it a few minutes to rest
Sliced chicken, crumbled bacon, chopped celery, diced red bell pepper, and diced green onions should all be combined in a big mixing bowl
Mix the fresh lemon juice and homemade paleo mayonnaise thoroughly in a small bowl that is kept apart
After adding the mayo mixture to the chicken salad, toss everything to coat thoroughly
If necessary, add more salt and pepper for seasoning
Serve the chicken salad over a bed of mixed salad greens
