Lemon Cupcakes with Candied Lemon Chips

Ingredients:

• 1 1/2 cups all-purpose flour
• 2 tsp baking powder
• 1/2 tsp salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• 2 tbsp lemon zest
• 1/4 cup fresh lemon juice
• 1/2 cup whole milk
• 1/2 cup candied lemon chips homemade or store-bought
• For the Lemon Glaze:
• 1 cup powdered sugar
• 2-3 tbsp fresh lemon juice
• For Garnish:
• Additional candied lemon chips
• Lemon zest

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners

In a bowl, whisk together the flour, baking powder, and salt

Set aside

In another bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the eggs one at a time, mixing well after each addition

Stir in the lemon zest and lemon juice

Alternate adding the dry ingredients and the milk to the batter, starting and ending with the dry ingredients

Mix until just combined

Gently fold in the candied lemon chips

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean

While the cupcakes are baking, prepare the lemon glaze by whisking together the powdered sugar and lemon juice until smooth

Adjust the consistency by adding more lemon juice if needed

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely

Once the cupcakes are completely cool, drizzle the lemon glaze over the top of each cupcake

Garnish with additional candied lemon chips and lemon zest
