Ingredients:
- 2 cups blanched almond flour
- 1/4 cup coconut flour
- 1/4 cup arrowroot flour
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract AIP-compliant
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup carob chips AIP-compliant or dairy-free chocolate chips AIP-compliant
- 1/4 cup unsweetened shredded coconut
Instructions:
Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper
Mix the arrowroot flour, coconut flour, almond flour, baking soda, and salt together in a mixing bowl
Melted coconut oil, maple syrup, and vanilla extract should all be thoroughly mixed together in a different bowl
Mixing until a cookie dough forms, pour the wet ingredients into the dry ingredients
Stir in shredded coconut and chocolate chips or dairy-free chocolate chips
Scoop out tablespoons of the dough and roll them into balls, then flatten them slightly on the prepared baking sheet
Bake for 10 to 12 minutes, or until the edges are golden brown, in a preheated oven
Take the cookies out of the oven and allow them to cool for a few minutes on the baking sheet before moving them to a wire rack to cool down completely
