Low Carb Cauliflower Breadsticks

These low carb cauliflower breadsticks are a delicious alternative to traditional breadsticks, packed with fresh herbs, garlic, and ooey-gooey cheese. They make a satisfying snack or appetizer for anyone following a keto or low carb diet.

Ingredients:

  • 1 medium head cauliflower, riced
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh herbs such as parsley, basil, or oregano, chopped
  • Salt and pepper to taste
  • 1/4 cup marinara sauce optional, for dipping

Instructions:

Start by heating the oven to 400F 200C

Put parchment paper on the bottom of a baking sheet

In a bowl that can go in the microwave, heat the riced cauliflower for 5 to 6 minutes, or until its soft

Allow it to cool a bit

Put the cooked cauliflower on a clean kitchen towel and squeeze out as much water as you can

Put the cauliflower, eggs, mozzarella cheese, Parmesan cheese, minced garlic, fresh herbs, salt, and pepper in a large bowl

Mix everything together well

Make a rectangle shape with the cauliflower mixture on the baking sheet that has been prepared

It should be about 1/4 inch thick

The crust should be set and the edges should be golden brown after 20 to 25 minutes in a hot oven

Take it out of the oven and let it cool down for a while

Cut into sticks of bread

If you want, you can serve it warm with marinara sauce to dip it in
