A delightful vegan orzo soup filled with spinach, carrots, and chickpeas, seasoned with a blend of aromatic spices.
Ingredients:
- 1 cup orzo
- 4 cups vegetable broth
- 1 cup spinach, chopped
- 1 cup carrots, diced
- 1 can 15 oz chickpeas, drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
Instructions:
Put olive oil in a pot and heat it over medium-low heat
Add garlic and onion and cook until they get soft
After 3 minutes, add the carrots and cook them
Pepper, salt, and paprika should all be mixed in
Add the vegetable broth and boil it
Put in the orzo and cook it for a while
Add the chickpeas and spinach and mix them in
Cook until the spinach wilts
If you need to, change the seasoning
Enjoy while hot
